Ingredients

  • 750 g mainly waxy potatoes (e.g. Linda)
  • 150 g ripened cream
  • 250 g Salad cream with 40 % low-fat yoghurt
  • 75 ml Milk
  • 7-10 Tbsp Salt
  • 7-10 Tbsp white pepper
  • 1/2 (approx. 200 g) Cucumber
  • 1 collar Radishes
  • 1 collar Spring onions
  • 1 Bread roll (from the previous day)
  • 1 medium onion
  • 1/2 bunch Parsley
  • 500 g mixed minced meat
  • 1 egg (size M)
  • 2 TEASPOONS medium hot mustard
  • 2 TABLESPOONS Oil
  • 1/2 Head picking salad

Directions

    Wash potatoes thoroughly and cook in boiling water for about 20 minutes. Drain, rinse with cold water and peel. Let the potatoes cool down. Mix sour cream, salad cream and milk. Season to taste with salt and pepper. Clean and wash the cucumber and cut or slice it thinly.

    Clean, wash and slice radishes. Leek onions clean, wash and cut into rings. Cut potatoes into slices. Mix the potatoes with the spring onions, cucumber, radishes and salad dressing. For the meatballs, soak rolls in cold water. Peel and finely dice the onion. Wash the parsley, dab dry, put something aside for garnishing. Finely chop the rest. Knead minced meat, squeezed out roll, egg, onion, mustard and parsley. Season with salt and pepper. Form approx. 12 small meatballs from the minced meat mixture.

Arrange the salad on a plate with the potato salad. Place the meatballs on top. Garnish with parsley that has been set aside. Serve with mustard
