Marzipan sheet cake with colourful fruit topping

Ingredients

  • 125 g Marzipan raw mass
  • 5 Eggs (size M)
  • 100 g Sugar
  • 1 package Vanillin sugar
  • 1 pinch Salt
  • 75 g Flour
  • 40 g Cornstarch
  • 1 TEASPOON Baking Powder
  • 500 g fresh apricots
  • 500 g Strawberries
  • 500 g green seedless grapes
  • 2 Kiwi
  • 2 packages glaze
  • 1/2 l light grape juice
  • 7-10 Tbsp Grease

Directions

    Finely crumble the marzipan. Separate 4 eggs. Cream whole egg, egg yolk, 75 g sugar, vanillin sugar and marzipan. Beat egg white and salt until stiff, carefully fold into the egg yolk mixture.

    Mix flour, starch and baking powder, sieve onto the egg mass and fold in. Spread the dough evenly on a greased baking tray and bake in a preheated oven (electric range: 175°C/ gas: level 2) for 20-25 minutes.

    Let the cake cool down. Blanch the apricots briefly in boiling water, rinse with cold water and peel the skin. Halve apricots, remove stones and cut halves into slices. Wash and clean the strawberries and cut them in half or quarters depending on size.

    Pluck the grapes from the stalks, wash them and cut the larger grapes in half. Peel the kiwi, halve it lengthwise and cut into slices. Mix all fruits. Spread half of the fruit on the cake.

    Mix the cake glaze powder and the remaining sugar, gradually add the grape juice while stirring and bring to the boil. Spread the glaze over the fruit topping. Spread the rest of the coloured fruit on top and let the glaze set.
