Marzipan semolina flummery with hot cherries

Ingredients

  • 1 glass (720 ml) Sour cherries
  • 1 package Sauce powder vanilla
  • 2 packages Vanillin sugar
  • 3 TABLESPOONS Sugar
  • 125 g cold marzipan paste
  • 3 fresh eggs (Gr. M)
  • 1 l Milk
  • 125 g Common wheat semolina
  • 7-10 Tbsp Salt

Directions

    Drain the cherries and collect the juice. Fill up cherry juice with 100 ml water. Mix the sauce powder with 5 tbsp. water. Bring cherry juice, 1 packet of vanilla sugar and 2 tablespoons of sugar to the boil. Stir in sauce powder, bring to the boil while stirring and simmer for about 1 minute.

    Fold in the cherries.

    Roughly grate the marzipan. Separate eggs. Boil milk. Sprinkle in semolina and bring to the boil while stirring. Simmer for about 1 minute while stirring. Stir in 1 tablespoon of sugar and 1 packet of vanilla sugar. Remove from the heat and allow to swell for 3-4 minutes.

    Whisk the egg yolks, stir in 2-3 tbsp. semolina. Stir into the semolina together with the grated marzipan, except for 2 tablespoons. Beat the egg whites and 1 pinch of salt with the whisks of the mixer until stiff. Fold the beaten egg white into the semolina.

    Arrange flummery and cherries in glasses and sprinkle with 2 tablespoons of marzipan shavings.
