Ingredients

Servings: 4
  • 100 g Dark chocolate
  • 30 g Cornstarch
  • 4 TABLESPOONS + some sugar
  • 10 TABLESPOONS + 400 ml milk
  • 1 Egg (Gr. M)
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Cling film

Directions

  1. 1

Roughly divide the chocolate into pieces with your hands. Then chop finely with a kitchen knife.

  2. 2

Mix starch and 2 tablespoons of sugar in a small bowl. Stir with 6 tablespoons of milk until smooth.

  3. 3

Bring 400 ml milk to the boil in a saucepan while stirring. Stir starch milk with a whisk into the milk and bring to the boil again while stirring continuously. Simmer for 2-3 minutes while stirring constantly to remove the starch taste.

  4. 4

This produces a thick creamy consistency.

  5. 5

Pull the pot off the stove. Separate egg. Whisk the egg yolk with 4 tbsp. milk with a fork in a small bowl. Then stir into the thickened hot milk.

  6. 6

Beat the egg whites and 1 pinch of salt in a bowl with the whisk of the mixer until stiff. Gradually add 2 tablespoons of sugar. Is the egg white really stiff? Simply turn the bowl upside down: If it stays in place, it's perfect!

  7. 7

Add chopped chocolate to the hot pudding. Stir until the chocolate is completely melted. Mmh...Yum!.

  8. 8

Carefully fold the beaten egg white into the pudding with a dough scraper or wooden spoon.

  9. 9

Finishing line in sight! Pour chocolate pudding into four small glasses or bowls. Sprinkle the pudding surface with some sugar or cover with cling film. This will prevent skin formation.

  10. 10

Chill the pudding for about 30 minutes. Afterwards, stir only briefly and take to the spoons, ready, looos!
