Ingredients

  • 2 ripe mangoes
  • 2 Onions
  • 125 g demerara sugar
  • 6 TABLESPOONS White wine vinegar
  • 1 TEASPOON Salt
  • 1/2 TEASPOON Cayenne pepper
  • 1 TEASPOON Sweet peppers
  • 1 stick of cinnamon
  • 2 Cloves
  • 2 Bay leaves

    Peel the mangos, cut the flesh off the stone and dice. Peel and finely dice the onions. Bring mangos, onions, brown sugar, white wine vinegar, salt, cayenne pepper, sweet paprika, cinnamon stick, cloves and bay leaves to the boil in a pot and simmer for about 20 minutes. Season mango chutney with salt and pepper. Let it cool down.
