Macadamia cookies with cranberries and cinnamon sugar

Ingredients

  • 100 g Macadamia nut kernels
  • 150 g Butter or margarine
  • 75 g + 2 tablespoons sugar
  • 75 g demerara sugar
  • 1 pinch Salt
  • 1 package Vanillin sugar
  • 1 egg (size M)
  • 225 g Flour
  • 100 g dried cranberries
  • 1 knife tip Cinnamon
  • baking paper

Directions

    Roughly chop the macadamia. Cream the fat, 75 g sugar, brown sugar, salt and vanillin sugar with the whisks of the hand mixer. First add the egg, then the flour. Mix in the macadamia seeds and cranberries.

    Line two baking trays with baking paper. Place 6 large piles on each baking parchment, press them a little flatter. Bake one after the other in a preheated oven (electric cooker: 200 °C/ convection oven: 175 °C/ gas: level 3) for 12-16 minutes.

    Mix cinnamon and 2 tablespoons of sugar. Sprinkle the still hot cookies with the cinnamon sugar. Let them cool down.
