Liver dumplings on rocket bed

Ingredients

Servings: 4
  • 40 g Pine nuts
  • 100 g dried tomatoes
  • 2 stem(s) Basil
  • 200 g Cream cheese preparation activ with natural yoghurt 0,2 % fat
  • 250 g veal liver sausage (21 % fat)
  • 7-10 Tbsp Pepper
  • 1 Onion
  • 150 g Rocket
  • 1-2 TABLESPOONS Lemon juice
  • 300 g round brown bread (6-7 cm Ø; 12 slices each = 25 g)
  • 7-10 Tbsp wooden sticks

Directions

    Roast pine nuts in a pan without fat. Cut 50 g dried tomatoes into fine strips. Wash basil, pluck leaves and chop. Mix cream cheese, liverwurst, basil, half of the pine nuts and the tomato strips. Season with pepper. Peel onion and cut into fine strips. Wash the rocket, drain and chop coarsely.

    Mix onion, rocket, remaining tomato strips and pine nuts. Season with lemon juice. Cut 12 small black bread slices (6-7 cm Ø). Cover with rocket salad and whole, dried tomato slices. Put 1 liverwurst dumpling on each slice. Pin with wooden sticks
