Lime Parfait

Ingredients

  • 1/4 l Milk
  • 4 untreated limes
  • 3 Egg Yolk
  • 100 g Sugar
  • 200 g Whipped cream
  • 1 package (300 g) frozen raspberries
  • 2 TABLESPOONS Sugar
  • 7-10 Tbsp Melissa and icing sugar

Directions

    Warm up the milk. Wash limes with hot water, rub dry. Grate the peel of 1 lime or peel it thinly and cut it into fine strips. Cut 4 thin slices of another 1 lime and set aside for decoration.

    Squeeze all the limes. Beat egg yolks and sugar until creamy. Add fruit juice. Gradually stir in the warm milk and beat until the cream thickens. Whip cream until stiff and fold into the cream.

    Fill into a box form ( 20 cm length ) and let it set overnight in the freezer. Defrost the raspberries and, except for 12 berries for decoration, puree them with the cutting stick of the hand mixer.

    Pass the puree through a sieve and season with sugar. Hold the box form very briefly in warm water and turn it over, and cut the parfait into slices. Spread the puree on plates and arrange the lime parfait on top.

    Decorate with lemon balm and dust with icing sugar.
