Roughly chop the nuts. Beat vinegar, salt, pepper, sugar and oil. Stir in cranberries and half of the nuts
Peel onion and cut into fine rings. Wash the tomatoes, quarter them and possibly remove the seeds. Dice flesh very finely. Clean lamb's lettuce, wash well and drain
Arrange lamb's lettuce, onion rings and diced tomatoes on four plates. Spread the vinaigrette and the rest of the nuts on top
