For the vinaigrette, roast sesame seeds in a pan without fat until golden brown, remove. Peel and finely dice the shallots. Mix vinegar and Teriyaki sauce. Season with a little salt, pepper and 1 pinch of sugar.
Beat both oils underneath. Stir in sesame seeds and shallots.
Pluck Bündner meat into pieces. Drain the beetroot and dice. (Attention! They stain strongly, it is best to wear disposable gloves.) Clean, wash and dry lamb's lettuce. Mix with beetroot, Bündner Fleisch and vinaigrette in a bowl and serve.
Baguette tastes good with it.
