Kasseler cutlet in cider sauce

Ingredients

Servings: 4
  • 3 Onions
  • 3 Apples
  • 3 TABLESPOONS Oil
  • 4 Kasseler chops (approx. 225 g each)
  • 1/2 bunch Thyme
  • 1 heaped Tsp flour
  • 250 ml Vegetable broth
  • 300 ml Cider (tart)
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 50 g Butter
  • 60 g White bread
  • 1 TEASPOON Lavender Flowers
  • 7-10 Tbsp Lavender
  • 7-10 Tbsp Aluminium foil

Directions

    Onions peel and cut into slices. Wash, cut into eighths and core the apples. Heat the oil in a large pan. Wash chops, dab dry and fry on both sides, put into an ovenproof dish. Spread the onions and apples in the casserole dish as well. Wash the thyme and shake dry. Spread about half of the twigs in the baking dish. Sweat the flour in the cooking fat while stirring. Add stock and cider, bring to the boil and season with salt and pepper. Pour sauce over the chops. Cover the tin with foil, press down firmly all around

    Braise in the preheated oven (electric cooker: 200 °C/ circulating air: 175 °C/ gas: see manufacturer) for approx. 30 minutes. Melt butter. Cut white bread into small pieces. Remove the leaves from the remaining thyme. Crumble the bread with thyme and lavender blossoms in the universal chopper, mix with the butter

    Remove foil. Sprinkle crumbs over the meat. Bake in the oven at the same temperature for about 15 minutes. Serve garnished with lavender
