For the almond milk cover the almonds in a bowl with cold water and let them swell overnight. Pour coffee into ice cube containers and freeze overnight.
Drain the almonds. Put them in a mixer with 1 litre of hot water. Mix for about 2 minutes until the almonds are very finely pureed. Line a sieve with a cloth. Pour in the almond mixture and pass through.
Squeeze the cloth well with the almond paste. Use almond paste for other purposes. Put almond milk in a cool place.
Just before serving, mix almond milk until frothy. Place coffee ice cubes in glasses and top up with almond milk.
