No-bake mini cheesecake with berries

Ingredients

Servings: 4
  • 1 package Vanilla sugar
  • 1 package Cream stabiliser
  • 100 g Whipped cream
  • 200 g Double cream cheese
  • 40 g Sugar
  • 30 g Butter
  • 50 g Butter biscuits
  • 400 g mixed berries (e.g. strawberries, blackberries and raspberries)
  • 4 TABLESPOONS Cherry jam (without pieces)
  • 3 Stem(s) Lemon balm

Directions

    Mix the vanilla sugar and cream setting agent. Whip the cream until stiff, allowing the vanilla sugar mix to trickle in. Mix cream cheese with sugar. Stir in half the cream, carefully fold in the rest. Cover and chill for about 1 hour.

    Melt the butter. Crumble the biscuits and mix them with the butter. Set aside 1 tsp for sprinkling. Divide the rest between four plates and press them together gently to form circles.

    For the berry groats, wash, clean and chop the strawberries. Select the remaining berries and wash if necessary. Stir jam with 1-2 tbsp. water until smooth. Carefully fold in all berries. Wash lemon balm, shake dry, pluck off leaves and cut into fine strips.

    Place the cheesecake cream as a ball on top of the biscuit mixture. Sprinkle the remaining crumbs over it. Serve with berry jelly. Sprinkle with lemon balm and serve with the rest of the grits.
