Ingredients

  • 1 red onion
  • 1 ripe avocado
  • 1/2 Mango
  • 150 g cherry tomatoes
  • 125 g Mozzarella
  • 4 TABLESPOONS Lime juice
  • 7-10 Tbsp salt, pepper, chili powder
  • 50 g Arugula
  • 1 TABLESPOON liquid honey
  • 2 piece(s) Salmon fillet (approx. 150 g each; e.g. from Norway)
  • 1 TABLESPOON Butter

Directions

    Peel the onion. Cut the avocado in half, remove the stone, remove the flesh from the skin. Peel mango, cut flesh from stone. Wash the tomatoes. Dice all prepared ingredients and mozzarella and mix. Season with 2 tablespoons lime juice, salt and pepper. Sort the arugula, wash, shake dry and fold into the salsa.

    Mix honey, 1 Msp. chilli powder and 1⁄4 tsp. salt. Wash the salmon, dab dry and spread with the honey mixture.

    Heat the butter in a pan and fry the salmon for about 2 minutes on each side. Sprinkle with the remaining lime juice.

    Serve the salmon with the avocado-mango salsa. Baguette tastes good with it.
