Chopping chocolate. Separate the eggs, beat the egg white with the whisk of the hand mixer until stiff. Add salt and 25 g sugar bit by bit, beating until the beaten egg white is shiny.
Mix 25 g sugar, starch and 6 tbsp. milk. Bring 400 ml milk to the boil, stir in the starch and bring to the boil while stirring. Remove from the stove. Mix egg yolk and 4 tbsp. milk, stir into the thickened milk.
Put chocolate on the hot pudding, let it melt and stir in. Fold in the beaten egg white. Fill the pudding into bowls.
