Pudim De Leite (Brazilian Flan)

Ingredients

Servings: 8
  • 250 g Sugar
  • 2 tin(s) (400 g each) sweetened condensed milk
  • 400 ml Milk
  • 7 Eggs (size M)
  • 1 Baby pineapple
  • 1 Papaya
  • 1 Mango
  • 1 TABLESPOON demerara sugar
  • 1-2 TABLESPOONS white rum
  • 7-10 Tbsp Grease

Directions

    Grease a Savar form (approx. 1.5 litres capacity). Heat sugar with 275 ml water in a pan. Let it simmer until it caramelizes golden yellow. Pour evenly on the bottom of the mould. Leave to cool. Mix the sweetened condensed milk, milk and eggs. Pour into the mould

    Fill the fat pan of the oven with hot water to approx. 2/3. Put the mould in it. Leave in the preheated oven (electric cooker: 175 °C/ circulating air: 150 °C/ gas: see manufacturer) for approx. 1 hour. Remove from the oven and allow to cool. Chill for several hours, preferably overnight

    Peel the pineapple, cut out the hard stalk. Cut the flesh into pieces. Halve the papaya, remove the seeds, remove the flesh from the peel halves with a tablespoon and dice. Peel mango, first remove flesh from stone, then cut into pieces. Mix fruit with sugar and rum. Turn the flan over onto a plate. Serve with the fruit salad
