Frisian almond pudding cake

Ingredients

Servings: 6
  • 6 discs (à 75 g) deep-frozen puff pastry
  • 8 TABLESPOONS + 440 ml milk
  • 1 package Almond-flavoured pudding powder
  • 40 g Sugar
  • 100 g Marzipan raw mass
  • 400 g mixed berries (e.g. strawberries, blackberries, blueberries)
  • 1/2 package (90 g) 1-2-3 Red fruit jelly
  • 2 TABLESPOONS Orange liqueur
  • 1 Egg yolk (size M)
  • 50 g flaked almonds
  • 1 leaf Gelatine
  • 100 g Whipped cream
  • baking paper

Directions

    Place the puff pastry slices next to each other and defrost. Mix 6 tbsp. milk, pudding powder and sugar. Bring 440 ml milk to the boil and prepare the pudding according to the instructions on the packet. Grate marzipan finely on a kitchen grater and stir into the hot pudding. Let the pudding get cold, but not firm

    Wash and clean the berries. Weigh 375 g fruit. Halve large fruits if necessary. Prepare the fruit with the red fruit jelly sugar according to the instructions on the packet. Stir in liqueur. Let the fruit steep for at least 15 minutes.

    In the meantime, place 2 plates of puff pastry on top of each other and roll out to a square (21 x 21 cm). Cut out 3 circles (20 cm Ø) using a cake ring. Place the dough circles on 2 baking trays lined with baking paper. Mix egg yolk and 2 tbsp. milk, brush the dough circles with it and sprinkle with almond flakes. Bake the cakes in the preheated oven (electric cooker: 200 °C/ convection oven: 175 °C/ gas: see manufacturer) one after the other for approx. 10 minutes

    Soak the gelatine. Stir the pudding until smooth. Squeeze the gelatine, dissolve carefully in a small pot. Stir in 2 tbsp. pudding, then stir everything into the rest of the pudding. Whip the cream until stiff and fold into the pudding

    Cut a puff pastry base into 6 pieces. Place one base on a cake plate and place a cake ring around it. Spread half of the porridge on the cake base. Place half of the pudding on top. Place the other cake base on top. Spread the rest of the groats and pudding on the cake base. Finish with the cake base cut into pieces. Chill the cake for about 2 hours
