Ingredients

  • 200 g Butter or margarine
  • 250 g Sugar
  • 7-10 Tbsp grated rind of 1 untreated lemon
  • 1 pinch Salt
  • 6 Eggs (size M)
  • 125 g Flour
  • 1 TEASPOON Baking Powder
  • 200 g ground hazelnuts
  • 200 g finely chopped
  • 7-10 Tbsp Dark chocolate
  • 300 g finely chopped
  • 7-10 Tbsp Whole milk couverture
  • 7-10 Tbsp Fat and breadcrumbs
  • 7-10 Tbsp parchment paper

Directions

    Mix the fat in a bowl with the whisk of the hand mixer until smooth. Gradually add sugar. Add lemon zest and salt. Separate the eggs. Gradually add egg yolks and stir until creamy. Mix flour, baking powder and nuts, stir in by the spoonful. Beat the egg whites until stiff, carefully fold into the dough. Finally, fold in the chocolate evenly. Pour into a greased wreath mould (24 cm Ø) sprinkled with breadcrumbs and bake in a preheated oven (electric range: 175 °C/ gas: level 2) for 60-70 minutes. If necessary, cover with some parchment paper for the last 15 minutes. Turn out onto a cake rack and let it cool down. Melt the couverture in a water bath and cover the cake evenly with it and let it dry. Makes about 20 pieces
