Wash the chives, dab dry and cut into small rolls. Beat the eggs and stir in the chives. Season with salt, pepper and nutmeg
Heat the oil in a pan (approx. 18 cm Ø). Pour the egg mixture into the pan and let it set at medium heat for about 8 minutes. Cut the omelette into pieces and serve. Halve the sausage slices and arrange on the pieces
