Clean the salad, wash thoroughly and drain. Mix mayonnaise with mustard. Spread slices of bread with mustard mayonnaise. Place salad leaves on top. Peel the skin off the mackerel fillets and arrange the fillets on the salad.
Heat the fat in a large pan. Break 4 eggs into the pan and fry. Place the fried eggs on the mackerels and sprinkle them generously with prawns. Season with pepper and serve garnished with parsley and gherkins
