Hearty pancakes with shredded cream

Ingredients

Servings: 4
  • 200 ml Milk
  • 1/2 cube (approx. 21 g) Yeast
  • 250 g + 2 tablespoons flour
  • 7-10 Tbsp sugar, salt, pepper
  • 250 g Potatoes
  • 2 Eggs (Gr. M)
  • 1 Onion
  • 3 Gherkins
  • 250 g Mushrooms
  • 4 Pork cutlet (approx. 150 g each)
  • 3 TABLESPOONS Oil
  • 200 g Whipped cream
  • 2-3 TABLESPOONS grainy mustard
  • 3 TABLESPOONS clarified butter
  • 2-3 stem(s) Oregano

Directions

    Warm the milk lukewarm. Crumble yeast into it and dissolve in the milk. Mix 250 g flour, 1 teaspoon sugar and salt. Peel and wash the potatoes and finely grate them into the flour. Add yeast milk and eggs. Mix everything with the dough hooks of the mixer to a thick dough.

    Cover and leave to rise in a warm place for about 45 minutes.

    In the meantime peel and finely dice the onion. Cut the cucumbers into slices. Clean the mushrooms, wash briefly if necessary and cut into slices. Dab meat dry and cut into strips.

    Heat 1 tablespoon of oil in a large frying pan. Brown the meat well all around. Season with salt and pepper and remove. Heat 2 tablespoons of oil in the frying fat. Fry the mushrooms in it. Fry the onion briefly.

    Season with salt and pepper. Sprinkle with 2 tbsp. flour and sauté. Deglaze with 300 ml water and cream. Bring to the boil and simmer for about 5 minutes. Stir in gherkins, mustard and meat and continue to simmer for 2-3 minutes.

    Heat 1 tablespoon of lard in a large frying pan. Add 4 pastry blobs with a small ladle and bake at medium heat for about 2 minutes on each side until golden brown. Keep ready pancakes warm. Bake 8 more pancakes from the rest of the lard and dough in the same way.

    Wash oregano and shake dry. Add the meat to the sauce and heat. Season the shredded meat with salt, pepper and 1 pinch of sugar. Serve the pancakes with the shredded meat.
