Wash the cucumber. Slice half and cut the rest into fine slices. Peel, wash and roughly grate the carrot. Mix yoghurt, cream cheese, grated cucumber and carrot. Season with salt and pepper.
Toast bread roast. Cut slices of bread diagonally in half. Spread the cream-cheese-vegetable mixture, cucumber, ham and cheese slices on the black bread. Fold one toast slice onto each slice of bread and wrap it in parsley leaves for on the way.
