Ingredients

  • 4 Eggs (Gr. M)
  • 7-10 Tbsp salt, pepper, nutmeg
  • 350 ml Milk
  • 250 g Flour
  • 1 knife tip Baking Powder
  • 3 Spring onions
  • 2 Carrots
  • 75 g Diced ham
  • 3 TABLESPOONS clarified butter
  • 2 TEASPOONS Butter

Directions

    Separate eggs. Beat egg whites until stiff and chill. Mix egg yolk, salt, pepper, nutmeg and milk with the whisk of the mixer. Sift flour and baking powder on top and stir in. Let the dough swell for about 10 minutes.

    Clean, wash and cut the spring onions into rings. Peel, wash and roughly grate the carrots. Sauté diced ham in 1 tbsp. hot lard. Fry carrots and spring onions briefly. Stir half of them into the dough, put the other half aside.

    Fold the beaten egg white into the dough in portions. Heat 1 tablespoon of lard in each of two coated pans. Fry half of the dough for 3-4 minutes at medium heat until golden brown. Quarter and turn the slices of lard and fry the other side until golden brown.

    Divide into bite-sized pieces. Add 1 teaspoon butter and half of the remaining vegetable mixture and flip through. Herbal quark tastes good with the Schmarrn.
