Peel the apple, quarter it, remove the seeds. Dice apple finely. Heat 1 tbsp. clarified butter in a pan, fry the ham and apple cubes for approx. 5 minutes. Let cool off.
Put the pancreas crumbs on a deep plate. Knead the apple and ham mix with the dumpling dough. Form into a roll (approx. 5 cm Ø) with a little flour. Cut the potato roll into approx. 20 slices (each approx. 1 1⁄2 cm thick) and turn them into panko crumbs.
Heat the rest of the clarified butter in portions in a large pan. Fry the cookies until crispy brown, turning them over. Keep the finished potato cookies warm.
