Onions peel and chop finely. Whip vinegar, salt, pepper and oil. Stir in half the onions. Wash and slice the tomatoes. Mix with the marinade
Wash the herbs and, except for something to garnish, cut finely. Cut the smoked pork into cubes
Whisk eggs, milk, a little salt, pepper and nutmeg. Stir in smoked pork loin and half of the herbs
Heat the fat in a coated pan. Sauté the rest of the onions in it. Add egg milk and let it simmer at medium heat. Push the egg mass more often to the middle. Spread the scrambled eggs over the slices of bread. Add the tomato salad. Sprinkle with the rest of the herbs and garnish
