Ham scrambled eggs on brown bread

Ingredients

Servings: 4
  • 4 discs Salmon ham
  • 6 Eggs
  • 6 TABLESPOONS Milk
  • 7-10 Tbsp salt, white pepper
  • 3 tablespoons (30 g) butter/margarine
  • 4 discs brown bread (approx. 50 g each)
  • 1/2 Beet cress or
  • 1/2 bunch Chives
  • 7-10 Tbsp lettuce leaves and tomato
  • 7-10 Tbsp to garnish

Directions

    Cut the ham into fine strips. Whisk eggs, milk and 1 pinch of salt

    Heat 1 tablespoon of fat in a coated frying pan. Lightly fry the ham strips in it. Pour egg mixture over it and let it set at medium heat. Use a spatula to push the egg mixture together from the edge to the middle more often.

    Spread the breads with the remaining fat. Wash the cress, shake dry and cut from the bed. Spread the scrambled eggs on the breads. Sprinkle with cress and pepper. Garnish with lettuce leaves and tomato

    - This makes the scrambled eggs particularly light: instead of milk, stir in 3-4 tablespoons of sparkling mineral water. Allow to set at medium heat and push together only carefully, do not stir! Otherwise it becomes crumbly and dry

    - The scrambled eggs also taste great with smoked salmon and fresh dill
