Gooseberry and Ginger Jam

Ingredients

  • 1 approx. 4 cm large piece of ginger tuber
  • 1 kg Gooseberries
  • 1 package (500 g) Extra gelling sugar 2:1
  • 6 Tl white rum

Directions

    Peel the ginger and dice very finely. Clean, wash and drain gooseberries well. Put them into a saucepan, mix with jam sugar and chop them into small pieces. Bring to the boil while stirring over high heat.

    Cook for 3 minutes while stirring continuously. Pour hot into carefully prepared glasses. Dribble 1 teaspoon of rum onto each surface and close immediately.
