Clean the asparagus, cut off the lower ends, peel and wash about 1/3 of the asparagus from the bottom. Cook the asparagus in boiling salted water for about 8 minutes and drain. In the meantime, clean and wash spring onions and cut into fine rings. Clean, wash and seed the chillies and cut them into fine rings. Mix lemon juice, honey, salt and pepper and add oil.
Mix in spring onions and chili. Clean, wash and drain the salad. Arrange lettuce, asparagus and ham on plates, spread some vinaigrette over it, add the rest of the vinaigrette extra. Garnish with lemon wheels and lemon balm and serve sprinkled with coloured pepper
