Gnocchi spinach salad

Ingredients

  • 4 discs (approx. 40 g) Breakfast bacon
  • 2 TABLESPOONS White wine vinegar
  • 1 TEASPOON Mustard
  • 1 TEASPOON liquid honey
  • 2 TABLESPOONS Sunflower oil
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 500 g Gnocchi from the cooling shelf
  • 100 g young leaf spinach
  • 250 g cherry tomatoes

Directions

    Leave the bacon in a pan without fat until crispy. Place bacon on kitchen paper, deglaze frying set with vinegar and loosen. Put the roast in a small bowl and mix with mustard and honey. Fold in the oil. Season dressing with salt and pepper.

    Prepare the gnocchi in boiling salted water according to the instructions on the packet. Let them cool down afterwards.

    clean or sort out, wash and spin dry or drain well. Wash tomatoes, dab dry and cut in half. Mix gnocchi, spinach and tomatoes. Break the bacon into large pieces. Arrange salad on plates. Drizzle with dressing and sprinkle bacon on top.
