Peel the ginger. First cut into slices, then into fine sticks. Bring water and sugar to the boil with 1⁄4 l, simmer for 10-12 minutes. Pour it still hot into a clean bottle (approx. 300 ml). Use for sweetening teas or as lemonade, pour mineral water over it. Shelf life approx. 3 months when stored cool.
