Wash the scampi, dab dry and remove the intestines. Peel garlic and cut into thin slices. Wash coriander, dab dry and chop coarsely (also the stalk). Marinate the scampi in oil, garlic slices and coriander for 3-4 hours. Remove the scampi from the marinade, put them on skewers and deep-fry them in the oil
