Fruit soup with semolina dumplings

Ingredients

  • 250 g Sweet cherries
  • 200 g red currants
  • 200 g Raspberries
  • 250 g Apricots
  • 1 untreated lemon
  • 1/2 l Cherry nectar
  • 100 g Sugar
  • 25 g Cornstarch
  • 1/8 l Milk
  • 1 TABLESPOON Sugar
  • 25 g Butter or margarine
  • 1/3 Baccello di vaniglia
  • 60 g Semolina
  • 1 egg (size M)

Directions

    Wash the cherries and currants and drain well. Stone the cherries, remove the currants from the stems. Sort the raspberries. Carve the apricots and put them briefly in boiling water. Rinse cold and remove the skin. Halve apricots, stone and cut into slices.

    Wash the lemon thoroughly and peel the skin with a peeler as a spiral. Juice, 1/4 litre water, sugar and fruits except the raspberries, bring to the boil in a pot. Stir cornflour with a little cold water until smooth. Pour into the fruits while stirring carefully and bring to the boil again for about 1 minute. Remove lemon zest and add raspberries to the soup. Let it cool down. For the semolina dumplings put milk, sugar and fat in a pot. Cut the vanilla pod lengthwise, scratch the pulp into the milk and add the pod as well. Bring to the boil, remove the vanilla pod and stir in the semolina, continue stirring until the semolina comes off the bottom of the pot as a dumpling. Let it cool down a little (approx. 5 minutes). Stir in the egg well.

    Let it cool down. For the semolina dumplings put milk, sugar and fat in a pot. Cut the vanilla pod lengthwise, scratch the pulp into the milk and add the pod as well. Bring to the boil, remove the vanilla pod and stir in the semolina, continue stirring until the semolina comes off the bottom of the pot as a dumpling. Let it cool down a little (approx. 5 minutes). Stir in the egg well. Form about 16 dumplings from the mixture with 2 moistened teaspoons. Boil up plenty of water in a pot. Add the dumplings and let them simmer without heat for about 5 minutes (they must float on top). Lift them out with a skimmer and let them cool down. Arrange the soup in deep plates and put the dumplings on top

    Form about 16 dumplings from the mixture with 2 moistened teaspoons. Boil up plenty of water in a pot. Add the dumplings and let them simmer without heat for about 5 minutes (they must float on top). Lift them out with a skimmer and let them cool down. Arrange the soup in deep plates and put the dumplings on top
