Put the milk and cream into a mixing cup. Add sauce powder and mix with the whisk of the hand mixer. Then stir at highest speed for approx. 1 minute. Put the sauce in a cool place. Put 1 litre of cold water, sugar, vanillin sugar and cold bowl powder into a mixing bowl and mix with the whisks of the hand mixer. Continue beating at highest speed for approx. 1 minute. Place in a cool place.
Sort raspberries and blueberries. Wash the currants, drain well on a sieve and pluck the berries from the panicles. Wash the strawberries, drain on a sieve, clean and halve. Stir the cold fruit peel. Mix the fruit and fold into the cold peel. Pour into a dessert bowl and decorate with lemon balm as desired. Add sauce extra
