Fried potato pan with meat loaf

Ingredients

Servings: 7
  • 2 kg medium-sized, waxy potatoes
  • 4 (approx. 300 g) medium-sized onions
  • 600 g Meatloaf
  • 100 g streaky smoked bacon
  • 1 collar Chives
  • 80-100 g clarified butter
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper

Directions

    Wash the potatoes, cover and cook in plenty of water for about 20 minutes. Drain the potatoes, rinse with cold water and peel. Let the potatoes cool down. In the meantime peel onions and cut them into rings. Chop meat loaf coarsely, bacon finely. Wash chives, dab dry and cut into small rolls. Cut potatoes into slices.

    Heat 10 g clarified butter in a large pan and let the bacon go crisp. Add onion rings, fry until golden brown and remove. Also fry the meat loaf in some clarified butter and take it out. Then fry the potatoes in 2-3 portions, each with some clarified butter. Finally, put all the potatoes, bacon, onion rings and meat loaf into the pan, season with salt and pepper and heat up again while turning. Sprinkle with chives
