Fried mozzarella medallions on salad

Ingredients

Servings: 4
  • 2 Balls (125 g each) Mozzarella cheese
  • 7-10 Tbsp Pepper
  • 3 TABLESPOONS Flour
  • 7-10 Tbsp Salt
  • 1 egg (size M)
  • 75 g Breadcrumbs
  • 1 package (250 g) Fresh Garden Mix
  • 3 TABLESPOONS light balsamic vinegar
  • 7-10 Tbsp Sugar
  • 5 TABLESPOONS Oil
  • 1/2 bunch Chives
  • 2 Tomatoes
  • 1 (approx. 200 g) Onion baguette
  • 7-10 Tbsp Chive blossoms

Directions

    Drain the mozzarella balls and cut into 6 slices each. Season with pepper. Mix flour and 1/4 teaspoon salt on a plate. Beat the egg and 2-3 tablespoons of water in a deep plate.

    Put the breadcrumbs on a plate. Turn the mozzarella slices first in flour, then in egg and finally in breadcrumbs. Put them in a cold place. Wash the salad and shake dry. Season vinegar with salt, pepper and sugar.

    Add 2 tablespoons of oil. Wash the chives and cut into small rolls. Stir into the vinaigrette. Wash, clean and chop the tomatoes. Mix the tomatoes and lettuce with the vinaigrette and arrange on plates.

    Heat 3 tablespoons of oil in a frying pan. Fry the mozzarella slices until golden brown, turning them over. Arrange on the salad. Garnish with chives. Onion bread tastes good with it.
