Fried Mozzarella in Parma ham

Ingredients

  • 4 Buffalo mozzarella (à 125 g; substitute for cow's milk mozzarella)
  • 8 discs Parma ham
  • 7-10 Tbsp Pepper
  • 16 small sage leaves
  • 2 TABLESPOONS Fig Mustard
  • 2 TABLESPOONS white balsamic vinegar
  • 3 TABLESPOONS Olive oil
  • 1/2 bunch Arugula (rocket)
  • 1 TABLESPOON Butter

Directions

    Dab mozzarella dry and cut in half horizontally. Sprinkle each slice of ham with pepper and cover with 1 sage leaf. Wrap one half of the mozzarella in each

    Mix mustard, vinegar, 1 tablespoon water and 1 tablespoon oil. Season with some pepper. Wash, clean and drain the arugula. Mix everything

    Heat 2 tablespoons of oil and butter. Fry the mozzarella parcels with the seam side down for about 2 minutes. Then turn and continue frying for about 2 minutes. Drain on kitchen paper. Briefly toss the rest of the sage in the frying fat

    Arrange mozzarella parcels with sage and rocket. Goes well with baguette
