Drain the mozzarella and cut in half. Dab mozzarella pieces dry. Place a sage leaf on each slice of ham and sprinkle with pepper. Place 1/2 mozzarella on each and wrap it in it. Mix mustard, vinegar, 3 tablespoons of oil and 3 tablespoons of water. Season with some pepper. Clean and wash the rocket.
Heat 2 tablespoons of oil and butter in a pan. Fry the cheese parcels with the seam side down for 2 minutes, turn them over and fry for another 2 minutes. Remove and toss 8 sage leaves in the frying fat. Arrange the mozzarella packet with sage leaves and rocket. Add vinaigrette. Delicious with baguette
