Fried cod on cucumber salad

Ingredients

Servings: 4
  • 1 untreated lemon
  • 700 g Fish fillet (e.g. cod or saithe)
  • 2 TABLESPOONS White wine vinegar
  • 7-10 Tbsp salt, pepper, sugar
  • 3-4 Tbsp Oil
  • 1 Cucumber
  • 1 large onion (e.g. red)
  • 1/2 bunch Dill and parsley

Directions

    Wash lemon hot, rub dry. Finely grate the peel, squeeze the juice. Wash fish, dab dry and cut into 4 pieces. Sprinkle with lemon juice, leave to stand

    Whip vinegar, salt, pepper, 1 pinch of sugar and 1-2 tablespoons of oil. Wash the cucumber and slice or cut into thin slices. Peel and chop the onion. Mix both with marinade

    Season fish with salt and pepper. Fry in 2 tablespoons of hot oil for 4-5 minutes on each side

    Wash the herbs and, except for a little dill for garnishing, cut finely. With the lemon-

    bowl and mix some salt. Sprinkle on the fried fish fillets. With the cucumber salad

    and garnish with the rest of the dill. Mashed potatoes taste good with it
