Mix yoghurt and honey. Whip the cream with the whisk of the hand mixer until stiff and carefully fold into the honey yoghurt
Clean and peel the pineapple, quarter it lengthwise and remove the stalk. Cut the pineapple quarters into slices about 1 1/2 cm thick. Roll pineapple pieces in coconut shavings. Heat butter in a frying pan and fry the pineapple pieces for about 3 minutes at medium heat, turning them over and taking them out.
Arrange the honey cream with the pineapple on plates, decorate with lemon balm. Add the rest of the honey cream
