Ingredients

  • 1/2 Chicken filet (approx. 75 g)
  • 1 bunch of greens
  • 6 stalks of chives
  • 70 ml low-fat milk
  • 30 g Flour
  • 1 TEASPOON Oil
  • 60 g Carrots
  • 75 g green beans
  • 80 g Celeriac
  • 6 red chicory leaves
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper

    Wash the chicken filet and dab dry. Clean, wash and roughly cut the soup vegetables. Boil 500 ml water. Cook meat and vegetables in it for 30-35 minutes at medium heat in an open pot

    In the meantime, wash the chives for the pancake flat bread, shake dry and cut into small rolls. Mix milk and chives in a bowl. Mix in the flour. Heat the oil in a coated pan. Fry the pancakes for about 4 minutes, turning them over, take them out and cut them into strips

    Peel, wash and thinly slice the carrots. Clean, wash and diagonally halve the beans. Celery peel, wash and cut into small cubes. Wash chicory leaves, drain well and pluck into bite-sized pieces

    Take the meat out of the broth and pluck it into pieces. Pour stock through a sieve into a second pot, add meat and bring to the boil. Cook the beans for 8-10 minutes. Add celery, carrots and flat bread after 3 minutes. Add chicory about 2 minutes before the end of cooking time. Season to taste with salt and pepper
