Penne salad with mozzarella in Parma ham

Ingredients

Servings: 4
  • 400 g Noodles (e.g. penne)
  • 7-10 Tbsp Salt
  • 7-10 Tbsp coarse pepper from the mill
  • 7-10 Tbsp Sugar
  • 250 g cherry tomatoes
  • 1 collar Basil
  • 2 (125 g each) Balls Buffalo mozzarella
  • 8 discs Parma ham
  • 4 TABLESPOONS good olive oil
  • 4 TABLESPOONS White wine vinegar

Directions

    Cook the pasta in 3-4 l boiling salted water (1 teaspoon salt per litre) according to the instructions on the packet. Wash and possibly halve the tomatoes. Wash basil, shake dry and pluck leaves.

    Quarter the mozzarella and wrap each in 1 slice of ham. Heat 1 tablespoon of oil in a frying pan. Fry the mozzarella for 2-3 minutes until the ham is crispy.

    Drain the pasta, rinse with cold water for a few minutes and drain. For the vinaigrette, mix vinegar, salt, pepper and 1 pinch of sugar and fold in 3 tbsp. oil.

    Mix the pasta, tomatoes and basil with the vinaigrette. Season to taste with salt and pepper. Cut the mozzarella parcels in half and arrange them on the penne salad.
