Herb pasta salad with chicken skewers

Ingredients

Servings: 4
  • 300 g Penne noodles
  • 7-10 Tbsp Salt
  • 7-10 Tbsp depending on size 1-2 bunches of chervil, parsley, sorrel
  • 6 TABLESPOONS White wine vinegar
  • 8 TABLESPOONS Sunflower oil
  • 7-10 Tbsp Pepper
  • 1 Onion
  • 300 g cherry tomatoes
  • 2 Chicken breast fillet (à approx. 150 g)
  • 7-10 Tbsp wooden skewers

Directions

    Prepare the pasta in boiling salted water according to the instructions on the packet. For the vinaigrette, wash the herbs and shake dry. Chop the herbs coarsely and puree about half of the herbs with the blender.

    Stir in vinegar and 4 tablespoons of oil. Season to taste with salt and pepper. Peel onion and chop finely.

    Wash the tomatoes, cut them in half. Drain the pasta, collecting about 100 ml of cooking water. Put the pasta and pasta water back into the pot. Add tomatoes, onion and vinaigrette and fold in. Let the salad cool down, then fold in the remaining herbs.

    Dab meat dry and cut lengthwise into approx. 12 strips. Put the strips on wooden skewers and season with salt and pepper. Heat 4 tablespoons of oil in a large pan and fry the skewers in it in portions while turning them for about 4 minutes.

    Arrange salad and skewers.
