Lemon noodles with avocado and bacon

Ingredients

Servings: 4
  • 7-10 Tbsp salt and pepper
  • 7-10 Tbsp Sugar
  • 100 g streaky smoked bacon
  • 1 Onion
  • 1 Garlic clove
  • 400 g ribbon noodles
  • 1 TABLESPOON Oil
  • 1 tablespoon (10 g) Flour
  • 100 g Whipped cream
  • 1/2 TEASPOON Vegetable broth (instant)
  • 2-3 TABLESPOONS Lemon juice
  • 1 collar Chives
  • 250 g cherry tomatoes
  • 1 ripe avocado

Directions

    For the noodles, boil 3-4 l salted water (approx. 1 teaspoon per litre). Cut bacon into small strips. Peel onion and garlic, dice finely. Cook noodles in boiling salted water according to package instructions.

    Heat the oil in a pan. Fry the bacon until crispy. Fry onion and garlic briefly. Dust with flour, sweat lightly and deglaze with 1/4 l water and cream. Bring to the boil, simmer for 3-4 minutes.

    Season to taste with salt, pepper, sugar, stock and 1-2 tablespoons lemon juice.

    Wash the chives, shake dry. Tomatoes wash, halve. Heat up with the chives in the sauce for about 5 minutes.

    Cut the avocado in half and remove the stone. Remove the flesh from the skin and cut into pieces. Sprinkle with 1 tablespoon lemon juice. Drain the pasta. Mix with avocado and sauce.
