Wash, clean and stone the cherries. Sprinkle with amaretto, leave to stand. Meanwhile bring milk to the boil and remove from the stove. Stir in rice pudding with a whisk and continue stirring for 1 minute.
Leave to stand for 10 minutes. Meanwhile peel melon, remove seeds and cut flesh into pieces. Stir the rice pudding again and fill it onto a plate. Mix the fruit and place on top. Serve sprinkled with ground and halved pistachios.
