Fine ribbon noodle nests with salmon and zucchini sauce

Ingredients

  • 1 small onion (about 40 g)
  • 1 (approx. 150 g) small zucchini
  • 1-2 TABLESPOONS Oil
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 75 g ribbon noodles
  • 10 g Flour
  • 100 ml Vegetable broth (instant)
  • 50 ml Milk
  • 50 ml White wine
  • 2 discs smoked salmon (approx. 30 g each)
  • 2 stem(s) Dill
  • 7-10 Tbsp Dill

Directions

    Peel and finely chop the onion. Clean, wash and cut the zucchini into small sticks. Heat oil in a pan and fry the onion in it. Add the zucchini and fry for about 5 minutes at low heat. Season with salt and pepper. Meanwhile cook the pasta in boiling salted water for about 9 minutes. Dust the zucchini with flour and sauté.

    Deglaze with stock, milk and wine while stirring and bring to the boil. Season to taste with salt and pepper. Cut salmon into fine strips and finally fold into the sauce. Chop the dill finely and sprinkle over the salmon. Drain the pasta and rinse with cold water. Form noodle nests and arrange them on a plate together with the sauce. Serve garnished with dill as you like
