Cook the rice for about 20 minutes in a little salt water. Fry the fillet of beef in a pan in hot oil on both sides. Season with salt and pepper. Clean, wash and chop the spring onion.
Heat pineapple slices and spring onions briefly in the meat stock. Mix spring onions with rice. Cut fillet into wide slices and arrange with pineapple and rice. Sprinkle rice with lemon peel. Serve everything garnished with a slice of lemon and lemon balm leaf.
