Fillet of beef with broccoli and chanterelles vegetables

Ingredients

  • 800 g Fillet of beef
  • 7-10 Tbsp Salt
  • 7-10 Tbsp white pepper
  • 2 Tomatoes
  • 1/2 bunch Celery
  • 2 TABLESPOONS Oil
  • 750 g Broccoli
  • 1 can(s) (425 ml) Chanterelles
  • 40 g Butter or margarine
  • 1/8 l clear consommé
  • 7-10 Tbsp (Instant)
  • 100 g Whipped cream
  • 4 cl Madeira
  • 2 TABLESPOONS dark sauce thickener

Directions

    Wash the meat, dab dry and season with pepper. Clean, wash and chop the tomatoes and celery. Heat oil. Put the meat in the fat pan of the oven, put the vegetables around the meat.

    Pour hot oil over the fillet and bake in the preheated oven (electric range: 225 ° C/ gas: level 4) for 40 minutes. In the meantime, clean the broccoli, divide into florets, wash and cook in little boiling salted water for 8 minutes.

    Drain on a sieve. Drain the mushrooms as well. Heat fat and steam broccoli and mushrooms for 3 minutes. Season to taste with salt and pepper. Remove meat from the oven, salt and keep warm.

    Deglaze the stock with stock and 1/8 litre water. Pour through a sieve and bring to the boil. Add cream and Madeira, bring to the boil again and add the sauce thickener while stirring. Season to taste with salt and pepper.

    Arrange meat and vegetables on a plate and serve with the sauce.
