Place the ham in a large pot and add water until the ham is completely covered. Add pepper and pimento and bring everything to the boil. Let it simmer at medium heat for about 3 hours.
Take the ham out of the stock. Remove fat edge and rind. Mix mustard, breadcrumbs, sugar and eggs and spread on the ham. Bake in the preheated oven (electric cooker: 200 °C/ convection oven: 175 °C/ gas: level 3) for approx. 30 minutes until golden brown.
Arrange everything on a plate and garnish with parsley. Parsley potatoes taste good with it.
