Cut white bread into 8 slices. Whisk eggs, cream, sugar and coconut flakes. Turn the slices of bread in it and let it swell for about 15 minutes. Meanwhile cut pineapple in half. Cut some long slices.
Peel the remaining pineapple, remove the stalk and cut the flesh into fine pieces. Fry breaded slices of bread in hot oil for 1-2 minutes on each side, set aside. Also cook the pineapple slices for about 1 minute in the frying fat.
Serve with the fried bread, pineapple and cream cheese sauce. Serve garnished with mint.
