Cucumber noodles with peanut sauce

Ingredients

Servings: 4
  • 2 large cucumbers (approx. 600 g each)
  • 1 Carrot
  • 2 TABLESPOONS Vinegar
  • 1 TABLESPOON Peanut cream
  • 4 TABLESPOONS Oil
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 1/4 collar Coriander
  • 1/2 bunch Spring onion
  • 1 Organic Lime
  • 50 g roasted peanut kernels

Directions

    Wash the cucumbers, grate them dry and, except for about 1/4 cucumber for garnishing, cut them into long thin strips with a spiral slicer. Peel the carrot and also cut it into long thin strips. Mix vinegar and peanut cream, fold in oil and season with salt and pepper.

    Wash coriander, shake dry and pluck leaves from the stems. Finely chop the leaves, except for a few for garnishing. Clean and wash the spring onion and cut into rings. Wash lime, grate dry and cut into slices.

    Peel the rest of the cucumber in strips and cut into slices.

    Mix the cucumber and carrot strips with dressing and chopped coriander, arrange. Sprinkle with peanuts. Garnish with cucumber slices, lime and coriander.
